Produced using seasonal honey from native flora & natural spring water from the beautiful High Country of the Northern Tablelands to NSW Australia. We mature the mead following the "Methode Champenoise Ancestrale" which produces a mead that retains the specifc floral character of its original blossom. The cloudiness & sediment are a natural occurrence, adding strength and body to the mead, just pour it gently to the end. This sparkling mead can be enjoyed now or will age gracefully stored in your wine collection. Best served chilled.
